Happy #TransformationTuesday! Went wedding dress shopping last week and didn’t cry when I went in the dressing room! I’m actually starting to like shopping for the first time in ever! Dedication, hard work, sweat and determination got me here and I’m not stopping now! People cracking jokes at me for going to the gym after a 12 hour shift instead of going out for food and drinks, not ever missing a Monday workout, portion control, nights in instead of nights out, all of it SO worth the feeling of accomplishment and truly being happy with myself! Ok, sharing another yoga pic just cuz im pretty dang proud of myself. I just started working on headstands 2 weeks ago and today I braved moving away from the wall. Come to find out I can actually do a headstand without leaning up against something! For the record, I did try without a wall the first day I started, so yes I am actually progressing and haven’t been able to do it the whole time! Practice makes perfect ya’ll! ♡

Gluten Free Vegan Chocolate Chip Donuts

In honor of National Donut (doughnut?) Day, I decided to whip up some homemade donuts. I saw this recipe earlier today on a fellow bloggers website and thought they looked delicious and simple enough to try out! My recipe, however, is gluten free and hers is not! It was just a matter of switching one ingredient!

Ingredients:
2 Tbsp Vegan Chocolate Chips
3 Tbsp Vegan Chocolate Chips For Top
1/2 Tbsp Ground Cinnamon
1/2 Cup Bob’s Gluten Free Rolled Oats
1/4 Cup Unsweetened Applesauce
1 tsp Stevia
1 Small Banana
3 Tbsp Unsweetened Almond Milk
1/4 Cup Ground Flax
1 Tbsp Almond Flour
Sprinkles

Makes: 6 Donuts

Combine all ingredients except the 3 Tbsp of chocolate chips set aside for the topping as well as the sprinkles. Mix well. The texture should be similar to cooked oatmeal.

Grease donut pan with olive oil spray and pour 1/4 cup mixture into each hole. Flatten to fit. I don’t have a donut pan, so I just used a cookie sheet and shaped the mixture. Bake at 350 degrees for 10 minutes, flip them over and bake for another 10 minutes.

After they were done baking I took a bottle cap to punch a hole in the middle. This is optional as these would taste great as cookies also!

Microwave remaining 3 Tbsp of chocolate chips and spread quickly onto donuts. You may then add sprinkles. I chose not to add sprinkles because I am not a hug fan of them. They do make them look a lot prettier though!

Per Donut: Approx. Calories 77, Fat 2.1g, Protein 2g, Carbs 18g, Fiber 3.4g

More Trail Time :)

I haven’t ran for a few weeks now because I was so caught up my last week in MN with hanging out with people, cleaning and packing that I didn’t take any time to run/workout and all my time here has been spent focused on music, Arbonne and unpacking. Today, I finally put my Nikes on and hit the trail! It felt so good, but I could definitely feel my last 3 weeks of slacking! The morning started off with a nice 1.8 mile run donated to the Partnership for a Healthier America using my Charity Miles app. The distance wasn’t far, but it felt pretty good for being inactive for a while.

I went the other direction on Greenway this time just to see which I liked better. There were no bridges that way, so I could probably take my blades out again if I wanted. The first hill would be a bit scary next to the river, but I might brave it out. I am so anxious to get my bike out here! The best part of my run was the post workout stretch (of course). It was ah-mazing! I am so in love with meditation music in my headphones and just taking in the joys life has given me. It feels even better in the grass, breathing in the fresh air. I could sit there for hours. It was freaking hot though, so I finally headed home!

I’m trying to stick with eating high glycemic fruits only after a vigorous workout. If I eat it soon enough after, my metabolism will be boosted and it’s also a nice reward for working hard!

Ingredients:
8 oz almond milk
2 scoops Arbonne Protein powder
1/2 C. (approx.) organic tropical fruit medley
1 scoop Arbonne Fiber Boost

After dinner, I decided it was time I got Romes out and about after being couped up for two weeks, aside from his play time in the yard, he deserved a nice walk. We walked for almost two miles, but it got dark quickly and I could tell he was pooped! He hasn’t had much exercise this summer at all because MN decided it didn’t want to have summer until after I moved. He only got to go out twice before I left. It also doesn’t help that he still has his winter coat on! I need to get his haircut asap. I’ve been struggling to find decently priced dog groomers out here.

Although it was short, I am so glad we went on this walk! As we walked the path I kept seeing flashes in the corner of my eye. I then finally realized they were fireflies! As soon as I saw one my stomach instantly filled with butterflies! I hadn’t seen a firefly that close up since I was a little girl. It seriously made my night. Every time one would flicker I couldn’t help, but smile. I thank God for moments like these. It made me realize that my life is finally coming together and that everything is falling into place. I’ve actually got the time to admire the little things in life. Honestly, seeing these fireflies light up was one of the best feelings I’ve had in a while. It was like seeing your best friend for the first time in months or an unexpected first kiss, like the stars were all just perfectly aligned and God was telling me that everything is the way it was intended. I wanted to capture the moment on camera so badly, but a picture could never explain the way I felt in that instant.

I am thankful to be living this journey and love all that has been given to me.
