Happy #TransformationTuesday! Went wedding dress shopping last week and didn’t cry when I went in the dressing room! I’m actually starting to like shopping for the first time in ever! Dedication, hard work, sweat and determination got me here and I’m not stopping now! People cracking jokes at me for going to the gym after a 12 hour shift instead of going out for food and drinks, not ever missing a Monday workout, portion control, nights in instead of nights out, all of it SO worth the feeling of accomplishment and truly being happy with myself! Ok, sharing another yoga pic just cuz im pretty dang proud of myself. I just started working on headstands 2 weeks ago and today I braved moving away from the wall. Come to find out I can actually do a headstand without leaning up against something! For the record, I did try without a wall the first day I started, so yes I am actually progressing and haven’t been able to do it the whole time! Practice makes perfect ya’ll! ♡

Gluten Free Vegan Chocolate Chip Donuts

In honor of National Donut (doughnut?) Day, I decided to whip up some homemade donuts. I saw this recipe earlier today on a fellow bloggers website and thought they looked delicious and simple enough to try out! My recipe, however, is gluten free and hers is not! It was just a matter of switching one ingredient!

Ingredients:
2 Tbsp Vegan Chocolate Chips
3 Tbsp Vegan Chocolate Chips For Top
1/2 Tbsp Ground Cinnamon
1/2 Cup Bob’s Gluten Free Rolled Oats
1/4 Cup Unsweetened Applesauce
1 tsp Stevia
1 Small Banana
3 Tbsp Unsweetened Almond Milk
1/4 Cup Ground Flax
1 Tbsp Almond Flour
Sprinkles

Makes: 6 Donuts

Combine all ingredients except the 3 Tbsp of chocolate chips set aside for the topping as well as the sprinkles. Mix well. The texture should be similar to cooked oatmeal.

Grease donut pan with olive oil spray and pour 1/4 cup mixture into each hole. Flatten to fit. I don’t have a donut pan, so I just used a cookie sheet and shaped the mixture. Bake at 350 degrees for 10 minutes, flip them over and bake for another 10 minutes.

After they were done baking I took a bottle cap to punch a hole in the middle. This is optional as these would taste great as cookies also!

Microwave remaining 3 Tbsp of chocolate chips and spread quickly onto donuts. You may then add sprinkles. I chose not to add sprinkles because I am not a hug fan of them. They do make them look a lot prettier though!

Per Donut: Approx. Calories 77, Fat 2.1g, Protein 2g, Carbs 18g, Fiber 3.4g
